• Set the maximum temperature on the appliance and
melt the 70% of the chocolate, stirring frequently.
• When the chocolate is completely melted and has
reached a temperature of 40-45° C lower at 30° C
the thermostat of the appliance and add the re-
maining 30% of chocolate at room temperature.
• Stir to mix and cool down to the temperature of
“tempering” recommended by the manufacturer
of the chocolate (the temperature of tempering
is indicatively 31 ° C for dark chocolate, 30° C for
milk chocolate and 29° C
• for white chocolate).
• This technique is called “tempering for insemi-
nation” and it’s useful to stabilize the crystals of
cocoa butter.
• For a precise tempering, it is recommend to
measure the temperature with a digital ther-
mometer for chocolate.
3. DESCRIPTION OF THE PRODUCT
This device is an electrical device whose function
is to melt solid chocolate and keep it at melted or
liquid form, for use in pastry, ice cream and bakery.
It is available in a single analog version with a ther-
mostat to adjust the temperature.
The analog version allows a static setting of the
temperature to be reached, so the timing of melt-
ing depends on the amount of chocolate placed in
the basin.
4. STRUCTURE AND OPERATING RULES
The item consists essentially of a molded body
made of plastic, in which the anodized aluminum
basin is inserted. The bottom of the shell is heat-
ed by an electric resistance, and the heat is trans-
ferred to the metal. The heater current is regulated
through an analog regulator circuit.
The temperature required for the chocolate is set
with the dial knob of a potentiometer which gives
the set point to the analog controller.
The effective temperature of the product goes
verifi ed with an appropriate thermometer for use
alimentary (not in equipment standard with the
equipment).

3. DESCRIPTION OF THE PRODUCT
Das Gerät ist ein elektronisches Schmelzgerät
zum Aufschmelzen einer bestimmten Menge von
Schokolade sowie dem Halten der eingestellten
Temperatur.
angibt.
Die effektive Temperatur des Produktes wird
einem eigens dafür vorgesehenen Lebensmit-
telthermostat kontrolliert (nicht in der Standard-
ausrüstung des Gerätes vorgesehen).

2. WSKAZÓWKI DOTYCZĄCE PODGRZEWANIA CZEKOLADY
• Ustaw maksymalną temperaturę na urządzeniu
i rozpuść 3/4 czekolady, często ją mieszając.
• Kiedy czekolada całkiem się rozpuści i osiągnie
temperaturę 40-45°C, zmniejsz temperaturę
za pomocą pokrętła temperatury, ustawiając ją
na wartość 30°C i dodaj pozostałą 1/4 czeko-
lady, pozostawionej wcześniej w temperaturze
pokojowej.
• Zamieszaj i zmniejsz temperaturę do wartości
zalecanej przez producenta czekolady (tempera-
tura podgrzewania to zazwyczaj 31°C dla czeko-
lady ciemnej, 30°C dla czekolady mlecznej i 29°C
dla czekolady białej).
• Technika ta nazywana jest temperowaniem i służy
do kontrolowanej krystalizacji kryształów masła
kakaowego.
• W celu zapewnienia dokładnego, prawidłowego
temperowania zaleca się dokonywanie pomiarów
temperatury za pomocą cyfrowego termometru
do czekolady.
3. OPIS URZĄDZENIA
Podgrzewacz czekolady jest urządzeniem elek-
trycznym przeznaczonym do topienia czekolady
i utrzymywania jej w stanie roztopionym lub ciekłym,
w celu wykorzystania w ciastach, lodach i wyrobach
piekarniczych.
Urządzenie dostępne jest w jednej wersji analogo-
wej z pokrętłem temperatury.
Wersja analogowa umożliwia statyczne ustawie-
nie wymaganej temperatury, co oznacza, że czas
topnienia zależy od ilości czekolady umieszczonej
w pojemniku.
4. BUDOWA URZĄDZENIA I ZASADA DZIAŁANIA
Urządzenie składa się z korpusu z tworzywa sztucz-
nego, w którym umieszczony jest pojemnik z ano-
dowanego aluminium. Opór elektryczny powoduje
wydzielanie się ciepła i nagrzewanie dolnej części
obudowy, które przekazywane jest do części me-
talowej. Przepływ prądu przez grzałkę regulowany
jest za pomocą obwodu regulatora analogowego.
Wymaganą temperaturę podgrzewania czekolady
ustawiaj jest za pomocą pokrętła potencjometru,
który reguluje temperaturę na sterowniku analo-
gowym.
Temperaturę przygotowanego produktu weryfi kuj
za pomocą odpowiedniego termometru elektro-
nicznego dopuszczonego do kontaktu z żywnością

è temperato, è diffi cile da sformare e oltre a es-
sere opaco e molle potrebbe presentare venature
biancastre.
4. STRUTTURA E PRINCIPI OPERATIVI
L’apparecchiatura è composta essenzialmente da
una scocca stampata in materiale plastico, nella
quale viene inserito il contenitore in alluminio ano-
dizzato.
